Absolutely. PEX actually freezes slightly faster than copper because it doesn't conduct ambient heat as quickly. Just ensure you don't strike the frozen PEX with a hammer, as extreme cold makes plastic temporarily brittle.
As long as you keep injecting a short burst of CO2 every 2-3 minutes, the plug will last indefinitely. Once you stop, a 1/2" plug typically takes 15-20 minutes to thaw at room temperature.
You must use a CO2 cylinder with a dip tube (siphon tube). This ensures liquid CO2, not gas, is delivered to the freeze jacket.
